test: add comprehensive tests for Issue #160 off-by-one date bugs
- Add tests reproducing off-by-one issues in completion calendar - Add tests for date formatting inconsistency between modal and service - Add tests for TaskService completion functionality - Improve RRule mock to support proper date generation - Update test coverage documentation These tests identify the root cause: TaskEditModal uses UTC date formatting while TaskService uses local timezone formatting, causing completion records to appear on wrong days in the calendar. Tests can be run with: npm run test -- --testPathPattern="issue-160"
